Always struggling to find a salad recipe that is a bit different? This combination of vegetables and seeds is sure to please. High in antioxidants, this fabulous salad is packed full of fresh goodness. With only 15 minutes from start to finish in putting together, the kids can lend a hand in constructing and tossing it, their involvement being helpful in them actually being willing to give it a try!

Ingredients

  • 80g (1/2cup) pepitas (pumpkin seed kernels) 
  • 2 red and 2 yellow capsicums (bell peppers), halved and deseeded, then cut into quarters
  • 2 tablespoons olive oil 
  • 250g green beans, topped 
  • 100g baby spinach leaves 
  • 2 tablespoons balsamic vinegar 
  • 2 tablespoons extra virgin olive oil
  • Pinch of sugar
  • Freshly ground black pepper

Method

  1. Grill the pepitas under the oven griller, on a tray lined with aluminium foil until toasted. 
  2. Lightly coat (with paper dipped in oil or a baster) capsicums with oil; then grill or chargrill on medium-high for 2-3 minutes on each side until tender and slightly charred. Transfer to a large bowl.
  3. Meanwhile, cook the beans in a covered microwave dish with a little water for 2 minutes until tender. Refresh under cold running water. Drain well.
  4. Add the pepitas, beans and baby spinach leaves to the capsicums and gently toss until well combined.
  5. Whisk together the vinegar, oil and sugar in a small jug until well combined. Taste and season with pepper. Place the salad in a large serving bowl. Drizzle with the dressing and gently toss to combine. Serve immediately.

Serves 4 as a side. (Optional: you may replace vinegar with lemon juice for a fresher taste and top with creamy feta cheese)
