Easy Baked Potatoes

You can bake these in the oven if you have time, but we prefer the microwave for a really healthy meal in minutes. There are no rules for toppings, but we have this meal most weeks and have trialled many options of which we have here.

Prep time | 10 minutes.
Cooking time |  10-20 minutes (depending on number potatoes).

Ingredients

Unwashed or skin on white potatoes: one small potato per child, one large per adult. You can use other potatoes such as sweet potato also.

  • 1 x avocado
  • 1 cup grated tasty cheese
  • 1 washed and grated carrot
  • 4 washed and sliced lettuce leaves
  • ¼ can red kidney beans
  • ½ cup frozen peas, put in hot water to defrost
  • ½ head broccoli chopped
  • 1 cup Chunky Tomato Sauce
  • 1 tablespoon toasted sunflower seeds per person, toasted under grill
  • 2 tsp Sweet chilli sauce per person
  •  Pepper to taste

Method

  1. Wash each potato and prick with a fork, at least 5 times, around the potato.
  2. Put on a microwave safe plate and microwave. For 4 medium potatoes, this is usually 10 minutes, but you may need to increase time, depending on your microwave power. Potato should be soft in the middle when pricked with a knife.
  3. Cut cooked potatoes open.
  4. Mash ¼ avocado into each with a fork, breaking up the potato.
  5. Add 1 tablespoon of tomato sauce, small spoon of beans, spoon of broccoli and top with some cheese.
  6. Microwave again for 2 minutes to heat up.

Top with grated carrot, peas, lettuce and optional ingredients. Final toppings are sesame seeds and sweet chilli sauce.

Nutritionist notes:
