"I am a mother of 2 girls now adults (22 and 19). I have had extensive experience with children as my girls were growing up. Recently I have been mothering a two year old girl for 18 months before she started school August last year.

I have been a very passionate owner/operator of restaurants for 35 years and gave up restaurant work 26 months ago totally burnt out by a demanding industry.

I need to actively be involved to be stimulated mentally and physically. I find the company of children, their happiness, imagination and naivety rewarding.

I have a French background and hold both French and Australian Passports, I am fluent in both languages.

The 150-seat fine dining restaurant, which employed over 30 staff, offered a modern Australian, upmarket cuisine with outback fusion flair. Our niche market was the corporate sector and our specialty was focused on special events and weddings. 1982- 1999 LAMROCK CAFÉ, BONDI BEACH

The Lamrock Café quickly became an institution on Bondi Beach for over 17 years. It was the first of its kind in the Eastern Suburbs market place operating in true Brasserie style from 7am to midnight, 7 days a week. We attracted and maintained a host of regulars from travellers, to young urban locals, high profile celebrities, writers and entrepreneurs, Kerrie and Jamie Paker, Gyngel Father and Son, John Singleton, Bryce Courteney to name a few, they joined us in many cases as their daily ritual. The busy café was known to effortlessly service up to 1000 customers on Sundays and continued to provide the suburb a consistent point of attraction until 2000.


1986 – 1989 VITAMIN SEA, BONDI BEACH

Vitamin Sea was an innovative acquisition, which began as Lamrock Café’s
Storage unit. Identified as a possible revenue stream, the tiny space was thoughtfully created and fitted out to house a coffee and juice bar. The small operation was designed with minimal overheads and to operate efficiently and effectively facilitating a demanding target market. The juice bar soon became a trendy hot spot and yielded a healthy local clientele and revenue to match for 3 years.


1981- 1982 CAFÉ BLASÉ, MOSMAN

Through my ability to transform unwanted spaces into functional spaces, and successful operations, an existing Health food store became a modern French Café that attracted a chic urban crowd and maintained its reputation for being one of the areas best-kept secrets and popular meeting spots that always provided the consistency that the local upper-crowd expected. This investment project sold within a year to fund a following venture.


1979 – 1980 CASSE CROUTE, BONDI BEACH

This popular sandwich bar in Bondi Beach once was an empty space. With a complete overhaul utilizing prior design knowledge and expertise, the successful express French snack bar was born. Casse Croute made a solid turnover by simply offering fresh juices, salads, baguettes sandwiches, croissants and homemade soups. The concept and wholesome dishes were created with the health conscious and time limited customer in mind. The business was an investment opportunity and as planned, sold one year later to a local buyer. The business was maintained as per original concept and operations procedures, which led to a continued success for many years.


1974 – 1980 CLOCHEMERLE RESTAURANT, POTTS POINT
Owner/Operator/ General Manager

A flourishing operation in the 70’s, Clochemerle was born in a time when French Cuisine was identified as a popular up and coming theme in Sydney and many other operators flooded the market soon after. The business functioned as a busy evening restaurant, which serviced a very high profile clientele such as a young Justin Hemmes, Elton John, Peter Allen, Graham Murphy of the Sydney Dance Co. and many more. By identifying our target audience and providing attentive service and consistency in product we grew the business to become a reputable late night hot spot. The space now houses Lotus Restaurant & Wine Bar.
